Searching forgotten flavors, exploring historical sources and experimenting with local ingredients resulted in this book, an aspiration to link the origins of Corfiot cuisine and the healthy way of cooking.
Vasiliki Karounou has been living in Corfu since 2000. Fascinated by the island's nature, history and the richness of itscuisine, she began transforming fruits, flowers, spices and herbs into preserves, sweet and sour chutneys and liqueurs. Since 2008, she is the lifeblood of Acordo Corfu Speciality Foods, Artisan + Natural, and since 2011 she's been showcasing her culinary explorations at the Ambelonas Corfu restaurant.
